The only fix I know is to create a new show on the same day as the old show and the rivalry should show up then you can delete it. No. You're doing something wrong. You either need to delete rivalries to free up space or delete a rivalry cesaro is a part of. This isn't an issue in my game.
2k23 is 2k22 universe mode but better. Tag finishers has been patched. We now have rivalry cutscenes which can help create your own stories. MITB doesn't corrupt the save. The real down note is trio entrances. But if you don't play with trios and all (which is my case) it's no big deal.
